Proper handling and storage are essential to preserve the quality, texture, and taste of frozen cakes. This guide outlines best practices for storing, thawing, and serving frozen cakes to ensure they remain in optimal condition from production to presentation.
1. Storing Cakes in the Freezer (-16°C or Below)
Frozen cakes should always be stored at a consistent temperature of -16°C or below to maintain product integrity and prevent quality deterioration.
- Frozen cakes can be stored for 6–12 months from the production date when kept under proper freezer conditions. Please refer to the expiration date indicated on the sticker at the bottom of the cake box. (Note: This guideline does not apply to cakes stored in chilled display cases.)
- Always keep cakes in a tightly sealed box or packaging to minimize exposure to air and prevent moisture loss, freezer burn, or unwanted odor absorption.
- For thawing, transfer the frozen cake from the freezer to a chilled display case and allow it to defrost gradually for at least 4 hours before serving. This slow thawing process helps preserve texture and flavor.
- Do not use a microwave or any rapid-heating method to defrost cakes, as this can cause uneven texture, moisture separation, and quality loss.
2. Storing Cakes in a Chilled Display Case (2–5°C)
Once removed from the freezer, cakes should be stored in a chilled environment to maintain freshness and visual appeal.
- Cakes remain in their best condition for 3–5 days after being transferred from frozen storage to a chilled display case set between 2–5°C.
- Use a cake cover or dome at all times to protect the cake from drying out and to shield it from external contaminants.
- Do not refreeze thawed cakes. Refreezing can negatively impact texture, taste, and overall quality, and is not recommended for food safety or product consistency.
3. Serving Cakes at Room Temperature
Proper handling during service is equally important to ensure the best customer experience.
- Cakes can be kept at room temperature for approximately 1–2 hours without significant quality loss, depending on ambient conditions.
- If a cake has been exposed to room temperature for a period of time, re-chilling it briefly before serving can help restore its texture and enhance overall taste.
- When delivering cakes, always pack them with ice gel packs and insulated containers to help maintain a stable temperature and preserve freshness during transit.

- Avoid storing food items in the display case for extended periods beyond recommended timelines.
